Nothing feels more like summer than sipping on a refreshing Mojito. Here's my recipe for the perfect classic Mojito.

For a Mojito, you really want fresh mint leaves. I typically have a fresh, living mint plant delivered from the supermarket at the beginning of every summer but, to my delight, my plant from last year survived the mild winter and flourished again in May. I would recommend storing it in a sheltered location (e.g. against a wall) over winter and not removing the dead stalks until the first new leaves start to appear, as that seems to protect them from the frost. Once it has begun to shoot, I put it on a table to stop slugs & snails nibbling at the leaves before they've had a chance to grow.

Perfect Mojito Recipe

Ingredients

8 fresh mint leaves or pinch the top off a few of the stems if the leaves are small

25 ml white rum (e.g. Bacardi)

25 ml dark rum (e.g. Kraken)

25 ml sugar syrup

4-6 ice cubes

300 ml soda water or to taste

Directions

  1. Press the mint leaves together to release the flavour and place them in a jug.

  2. "Muddle" (i.e. squish) them, ideally using a muddling stick with a rubber tip.

  3. Pour the rum and sugar syrup into the jug on top of the mint and give it a stir.

  4. Place the ice cubes in a tall glass and pour the contents of the jug over the top.

  5. Top up with your desired amount of soda water and stir with a stirrer or metal straw.

  6. Enjoy!

Tip

  • The alcohol content can be halved by only half-filling the 25ml measure or shot glass with each type of rum, but I would still recommend using both types to get the full flavour, as I think mixing the two is what makes this recipe perfect and gives it that slightly "dirty" look.
